1) As soon as the hostess picks up her napkin(餐巾), pick yours up and lay it on your lap. Sometimes a roll of bread is wrapped in it; if so, toke it our and put it on your side plate.
2) The Soup Course
Dinner usually begins with soup. The largest spoon at your place is the soup spoon. It will be beside your plate at the right-hand side.
3) The Fish Course
If there is a fish course, it will probably follow the soup. There may be a special fork for the fish, or it may be similar to the meat fork. Often it is smaller.
4) The Meat Course
The main Course is usually served by the host himself, especially if it is a fowl or a roast which need to be carved. He will often ask each guest what piece he prefers, and it is quite proper to state your preference as to lean or fat, dark or light.
5) Using Knife and Fork
If you have English and American friends you will notice a few differences in their customs of eating. For the main or meat curse, the English keep the fork in the left hand, point curved downward, and bring the food to the mouth either by sticking the points onto it or in the case of soft vegetables, by placing it firmly on the fork in this position with the knife. Americans carve the meat in the same position, then lay down the knife and taking the fork in the right hand with the point turned up, push it under a small piece of food without the help of the knife and bring it to the moth right-side-up.
6) Helping Yourself and Refusing
If a servant passes food around, he will pass the dish in at your left hand so that you can conveniently serve yourself with your right hand. Never serve yourself while the dish is on your right; it is then the turn of your neighbor on the right. It is polite to take some of everything that is passed to you. 7) Second Helpings

8) The Salad Course
A salad is eaten with a fork only held in the right hand with points turned up. There is usually a special one for the salad, a little smaller than the meat fork.
9) Bread and Butter
Bread is taken in the fingers and laid on the side plate or the edge of the large plate, it is never take with a fork. Butter is taken from the butter dish with the butter knife and placed on the side plate, not on one's bread.

一、入座
進入西餐廳后,由服務(wù)生帶領(lǐng)入坐,不可冒然入位。男士或服務(wù)生可幫女士拉開椅子協(xié)助入座,一般由椅子左側(cè)入座。座位的安排于離出口最遠(yuǎn)的位置為上位。
二、餐具的擺設(shè)
(1).擺在中央的稱為擺飾盤或稱展示盤Show Plate,餐巾置于裝飾盤的上面或左側(cè)。
(2).盤子右邊旁擺刀、湯匙,左邊擺叉子。可依用餐順序、前菜、湯、料理、魚料理、肉料理、視你所需而由外側(cè)至內(nèi)使用。
(3).玻璃杯擺右上角,最大的是裝水用的高腳杯,次大的是紅葡萄酒所用的,而細(xì)長的玻璃杯是白葡萄酒所用,視情況也會擺上香檳或雪莉酒所用的玻璃杯。
(4).面包盤和奶油刀置于左手邊,裝飾盤對面則放咖啡或吃點心所用的小湯匙和刀叉。

三、刀叉的使用方法
(1).西餐進餐時一般以右手拿刀,左手拿叉。如果用左手拿叉不方便,也可以使用右手。
(2).用餐中,有事而離席時,宜把刀叉擺成八字型掛放在餐盤上。用餐結(jié)束后,則是平行的斜放在盤上一側(cè)。
四、喝湯的禮儀
(1).西餐的湯分為清湯及濃湯,較正式的.餐廳再供應(yīng)清湯時使用橢圓形湯匙及湯杯,供應(yīng)濃湯時使用圓形湯匙及寬口湯盤。
(2).拿湯匙的姿勢是由內(nèi)經(jīng)外側(cè)舀食。
(3).西餐喝湯時,不能發(fā)出聲音。用湯時,不可用嘴將湯吹涼。可輕輕搖動湯使其稍涼。
(4).食用完畢后把湯匙放在靠自己身前的底盤上,或是放在盤中。將湯匙的柄放在右邊,而湯匙凹陷的部份向上;湯杯與湯盤都是如此。
五、食用面包的禮儀
(1).面包的位置于主菜的左側(cè)。食用時可用左手拿面包,再用右手把面包撕成小塊,然后用左手拿著小面包,用右手涂抹奶油。把面包撕成小塊后再涂奶。
(2).在意大利餐廳中,有時會以橄欖油取代奶油,可將面包用手撕一小塊沾加了調(diào)味料及香料的橄欖油吃。面包切忌用刀子切割。
六、食用沙拉
(1).色拉盤放在主菜盤的左邊。
(2).美國人通常將色拉供應(yīng)于主菜前,而歐洲人如法國法國人,通常將色拉放于主菜后供應(yīng)。
(3).色拉用叉子吃,如菜葉太大,可用刀在色拉盤中切割,然后再用叉子吃。
七、食用魚、蝦、海鮮
1.食用半只龍蝦時,應(yīng)左手持叉,將蝦尾叉起,右手持刀,插了進尾端,壓住蝦殼,用叉將蝦肉拖出再切食。龍蝦腳可用手指撕去蝦殼食之。
2.吃魚片以吃一片切一片為原則,可用右手持叉進食,或用魚刀。
3.食用帶頭尾及骨頭的全魚時,宜先將頭、尾切除,再去鰭,將切下的頭尾鰭放在盤子一邊,再吃魚肉。
4.去除魚骨,要用刀叉,不能用手。若口中有魚骨或其它骨刺,則可用手自合攏的唇間取出放在盤子上。
5.全魚吃完魚的上層,切勿翻身,應(yīng)用刀叉剝除龍骨再吃下層魚肉。
6.附帶的檸檬片,宜用刀叉擠汁。
食用蝦、蟹時,待應(yīng)都會端上一碗洗手水。
八、食用肉類
(1).認(rèn)識牛排的熟度。
猶帶血的是rare。
半生的是medium rare。
七分熟的是medium。
熟透的是welldone。
牛肉可依自己喜好熟度點餐,但豬肉及雞肉均為全熟供應(yīng)。
(2).切牛排應(yīng)由外側(cè)向內(nèi)。一次未切下,再切一次,不能像拉鋸子方式切,亦不要拉扯,勿發(fā)出聲響,肉的大小以一口為宜。
(3).嚼食肉時,兩唇合攏,不要出聲。嚼肉食勿說話或以刀叉比畫。
(4).吃肉時宜切一塊吃一塊,勿將肉全部一次切小塊,會導(dǎo)致肉汁流失,及溫度下降。
(5).烤雞或炸雞,在正式場合用刀叉吃。
九、食用水果
(1).蛋糕及派、餅,用叉取食,較硬者用刀切割后,用叉取食。
(2).冰淇淋、布丁等,用匙取食。硬餅干小塊的,用手取食。
(3).粒狀水果如葡萄,可用手抓來吃。如需吐籽,應(yīng)吐于掌中再放在碟里。
(4).多汁的水果如西瓜、柚子等,應(yīng)用匙取食。
(5).西餐在吃完水果時,常上洗手缽(finger bowl),所盛的水,供洗手用。只用來洗手指。勿將整個手伸進去。
十、喝咖啡及茶的禮儀
咖啡及茶中單寧酸可幫助消化。喝咖啡時,用食指和拇指端起來喝,不須端起咖啡底盤,勿以咖啡匙舀起咖啡,嘗是否夠甜。
